Food for Thought at the Restaurant Marchal

There are memorable meals, and then there are meals that are so extraordinary, they almost feel like an out-of-body experience. That’s what it is like at Restaurant Marchal, in the newly renovated landmark Hotel d’Angleterre, set in Copenhagen’s Kongens Nytorv (The King’s Square). This year, Marchal was awarded its first Michelin star, the first for the historic D’Angleterre in 258 years, making it Denmark’s only Michelin-rated hotel restaurant.

Salads are amazing, desserts are spectacular (licorice ice cream with frozen herbs, crisp meringue and lemon, pictured here), as is every course in-between. Marchal Executive Chef Ronny Emborg is a sensorial wizard whose gift for delighting eye and palate results in lovely, layered dishes with rich, round flavors like asparagus with nettles, topped with warm buttermilk and a smoked cheese center; and baby shrimp with dill-infused oil, fresh dill, tomato, and frozen cream topping.

Chef Emborg trained in some of the world’s best restaurants, including El Bulli. He is former personal chef to Her Majesty Queen Margrethe II of Denmark, who, no surprise, will spend New Year’s Eve at Marchal, which is featuring a multi-course Gala Dinner.
